Potato Omelette

Ingredients

2 Medium potatoes 1 Medium spring onion or shallot (the spring onion is optional) 2 Eggs (medium) 40 ml. Olive or Vegetable Oil Pinch of salt

Preparation


Peel the potatoes and slice in very thin rounds, with the help of a potato peeler or a mandolin slicer. Peel and chop the onion. Place the potatoes, olive oil and salt in the Steam Case. Cook for 4 minutes in the microwave. Carefully remove the mixture and stir it, checking to see if the potatoes are cooked to taste. Add the eggs (slightly mixed, not beaten) and stir well. Place in the microwave and cook for 1 ½ minutes until the eggs are set. Enjoy!
